One Pot Cheesy Chicken Broccoli & Rice Casserole



2 tablespoons olive oil

3 boneless, skinless hen breasts

1 teaspoon salt

½ teaspoon pepper

1 cup raw basmati rice OR long-grain rice

2 ½ cups hen broth

1 bag (12 oz) frozen steamable broccoli

2 cups shredded cheddar cheese
