Classic Lemon Cheesecake

Crust:

2¾ cups vanilla wafer crumbs

¾ cup flour

¼ cup sugar

½ tsp salt

6 tbsp melted butter

Instructions for Crust:

  1. Preheat oven to 325°F (163°C).
  2. Mix all crust ingredients until combined.
  3. Press into the bottom of a springform pan.
  4. Bake for 10 minutes. Let cool.

Filling:

24 oz cream cheese (softened)

1 cup sugar

3 eggs

2 tsp vanilla

½ cup sour cream

1 tsp lemon zest

2 tsp lemon juice

Instructions for Filling:

  1. Beat cream cheese and sugar until smooth.
  2. Add eggs one at a time, then mix in vanilla, sour cream, lemon zest, and juice.
  3. Pour filling over crust.
  4. Bake at 325°F for 55–65 minutes or until the center is set.
  5. Cool completely, then chill at least 4 hours or overnight.

Topping:

10 oz lemon curd

6.5 oz whipped cream

Instructions for Topping:

  1. Spread lemon curd over the chilled cheesecake.
  2. Pipe or dollop whipped cream around the edges before serving.

Crust:

2 cups graham cracker crumbs

2 tbsp sugar

6 tbsp melted butter

2 tsp lemon zest

Instructions for Crust:

  1. Preheat oven to 350°F (177°C).
  2. Combine all ingredients and press into a 9×13-inch baking dish.
  3. Bake for 10 minutes. Let cool.

Filling:

16 oz cream cheese (softened)

¾ cup sugar

3 tbsp sour cream

1 tbsp lemon juice

1 tbsp lemon zest

1 tsp vanilla

3 eggs

½ cup lemon curd

Instructions for Filling:

  1. Beat cream cheese and sugar until fluffy.
  2. Add sour cream, lemon juice/zest, and vanilla.
  3. Beat in eggs one at a time.
  4. Spread over crust.
  5. Drop spoonfuls of lemon curd on top and swirl gently.
  6. Bake 30–35 minutes or until center is set.
  7. Cool, then chill before cutting into bars.

Ingredients:

12 oz cream cheese (softened)

3 tbsp lemon juice

1¼ cups powdered sugar

1 cup heavy whipping cream

9-inch graham cracker crust

1 cup lemon curd

Lemon zest (for garnish)

Instructions:

  1. Beat cream cheese, lemon juice, and powdered sugar until smooth.
  2. In a separate bowl, whip heavy cream to stiff peaks.
  3. Fold whipped cream into the cream cheese mixture.
  4. Spoon into the graham crust and smooth the top.
  5. Spread lemon curd on top.
  6. Chill 4 hours or until set.
  7. Garnish with lemon zest before serving.
