Classic Lemon Cheesecake

Crust:
2¾ cups vanilla wafer crumbs
¾ cup flour
¼ cup sugar
½ tsp salt
6 tbsp melted butter
Instructions for Crust:
- Preheat oven to 325°F (163°C).
- Mix all crust ingredients until combined.
- Press into the bottom of a springform pan.
- Bake for 10 minutes. Let cool.
Filling:
24 oz cream cheese (softened)
1 cup sugar
3 eggs
2 tsp vanilla
½ cup sour cream
1 tsp lemon zest
2 tsp lemon juice
Instructions for Filling:
- Beat cream cheese and sugar until smooth.
- Add eggs one at a time, then mix in vanilla, sour cream, lemon zest, and juice.
- Pour filling over crust.
- Bake at 325°F for 55–65 minutes or until the center is set.
- Cool completely, then chill at least 4 hours or overnight.
Topping:
10 oz lemon curd
6.5 oz whipped cream
Instructions for Topping:
- Spread lemon curd over the chilled cheesecake.
- Pipe or dollop whipped cream around the edges before serving.
🍋 Lemon Cheesecake Bars

Crust:
2 cups graham cracker crumbs
2 tbsp sugar
6 tbsp melted butter
2 tsp lemon zest
Instructions for Crust:
- Preheat oven to 350°F (177°C).
- Combine all ingredients and press into a 9×13-inch baking dish.
- Bake for 10 minutes. Let cool.
Filling:
16 oz cream cheese (softened)
¾ cup sugar
3 tbsp sour cream
1 tbsp lemon juice
1 tbsp lemon zest
1 tsp vanilla
3 eggs
½ cup lemon curd
Instructions for Filling:
- Beat cream cheese and sugar until fluffy.
- Add sour cream, lemon juice/zest, and vanilla.
- Beat in eggs one at a time.
- Spread over crust.
- Drop spoonfuls of lemon curd on top and swirl gently.
- Bake 30–35 minutes or until center is set.
- Cool, then chill before cutting into bars.
🍋 Cream Cheese Lemon Pie (No-Bake)

Ingredients:
12 oz cream cheese (softened)
3 tbsp lemon juice
1¼ cups powdered sugar
1 cup heavy whipping cream
9-inch graham cracker crust
1 cup lemon curd
Lemon zest (for garnish)
Instructions:
- Beat cream cheese, lemon juice, and powdered sugar until smooth.
- In a separate bowl, whip heavy cream to stiff peaks.
- Fold whipped cream into the cream cheese mixture.
- Spoon into the graham crust and smooth the top.
- Spread lemon curd on top.
- Chill 4 hours or until set.
- Garnish with lemon zest before serving.
