Preheat the oven to 170°c.
In a big bowl add oil, white and brown sugar.
Beat till gentle .
Combine within the eggs separately.
Add buttermilk and vanilla then combine properly.
Sift in flour, baking powder, bicarbonate of soda, salt, cinnamon, nutmeg and ginger.
Then gently combine.
Add the grated carrots, walnuts with raisins, and gently combine.
Line 2 baking pans with parchment paper.
Divide the batter (combination) equally in 2 baking pans.
Bake in a preheated oven for 30-35 minutes minutes or till properly baked.
