Baked Garlic Parmesan Potatoes

Ingredients 

4 large russet potatoes

1/4 cup olive oil

3 minced garlic cloves

1 teaspoon of dried oregano

1 teaspoon of dried thyme

1/2 teaspoon of paprika

1/2 teaspoon of salt

1/2 teaspoon black pepper

1/2 cup grated Parmesan

Minced fresh parsley (for garnish)

INSTRUCTIONS: 

Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper or grease it lightly.

Cut each potato into 8 corners. Place the potato wedges in a large bowl.

In a small bowl, mix olive oil, minced garlic, oregano, thyme, paprika, salt and black pepper.

Pour the olive oil mixture over the potatoes and toss to coat evenly.

Arrange the potato wedges in a single layer on the prepared baking sheet.

Sprinkle grated Parmesan evenly over the potato corners.

Bake in a preheated oven for 35-40 minutes, or until the potatoes are golden brown and crispy, turning them halfway through baking.

Garnished with fresh chopped parsley before serving.
