Corn is likely one of the hottest cereals on the earth and a very good supply of nutritional vitamins equivalent to B6, folic acid and potassium. A little bit arctic char on these ears is an epic addition to this salad.
INGREDIENTS :
- 1/2 small purple onion, finely chopped
- 1 purple pepper, seeded and chopped
- 1/4 cup lime juice
- 1 tablespoon olive oil
- Kosher salt
- Black pepper
- 6 ears of corn, shelled
- 3/4 cup cilantro, chopped
- 3 ounces queso fresco, crumbled
Instructions:
- Warmth the grill to medium warmth. In a bowl, mix the purple onion, chili pepper, lime juice, oil and ½ teaspoon of salt and pepper.
- Grill corn, turning often, till charred, 10 to 12 minutes. Depart to chill, then minimize the ears of corn.
- Add to onion combination and stir to mix. Stir in cilantro and queso fresco.
