INGREDIENTS :
- 6 kilos medium purple potatoes
- Water
- CLOTHING:
- 1 cup of water
- 1/2 cup butter, cubed
- 1/4 cup white vinegar
- 2 giant eggs
- 1/2 cup sugar
- 4-1/2 teaspoons cornstarch
- 3/4 cup heavy whipped cream
- 3/4 cup Miracle Whip
SALAD:
- 1 small onion, finely chopped
- 2 inexperienced onions, sliced
- 1 teaspoon of salt
- 1/2 teaspoon of pepper
- 3 giant hard-boiled eggs, sliced
- Paprika
DIRECTIONS:
1. Place the potatoes in a pot and canopy with water. Carry to a boil. Decrease the temperature; cowl and prepare dinner till tender, 15-20 minutes. Drain. When cool sufficient to deal with, peel and slice potatoes; cool fully.
2. For the dressing, within the prime of a double boiler or metallic bowl over barely simmering water, warmth 1 cup of water, butter and vinegar till butter is melted . In a small bowl, beat the eggs; add sugar and cornstarch. Add to butter combination; prepare dinner and stir till thickened, 5-7 minutes. Switch to a big bowl; cool fully.
3. In a small bowl, beat the cream till stiff peaks kind. Stir Miracle Whip into cooled dressing combination; stir in whipped cream. Stir in onion, inexperienced onions, salt and pepper. Add the potatoes; stir flippantly to mix. Refrigerate, lined, till chilled.
4. To serve, prime with hard-boiled eggs; sprinkle with paprika.
