Stuffed Cabbage Rolls, also known as Cabbage Rolls or Golabki in Polish cuisine, are a delicious and comforting dish. Here’s a classic recipe for Old-Fashioned Stuffed Cabbage Rolls:

Ingredients:

For the Cabbage Rolls:

  • 1 large head of cabbage
  • 1 cup cooked rice
  • 1 lb ground beef
  • 1/2 lb ground pork
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1 cup cooked and chopped mushrooms (optional)
  • 1 egg
  • Salt and pepper to taste
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • 1 can (14 oz) crushed tomatoes
  • 1 cup beef or vegetable broth

For the Tomato Sauce:

  • 1 can (28 oz) crushed tomatoes
  • 1 tablespoon tomato paste
  • 1 teaspoon sugar
  • Salt and pepper to taste

Instructions:

  1. Preheat the oven to 350°F (175°C).
  2. Core the cabbage and place it in a large pot of boiling water. Cook for about 5-7 minutes until the leaves are soft and pliable. Remove the cabbage and let it cool.
  3. In a large mixing bowl, combine the cooked rice, ground beef, ground pork, chopped onion, minced garlic, mushrooms (if using), egg, salt, pepper, thyme, and oregano. Mix well.
  4. Carefully peel off the cabbage leaves one by one, trimming the thick center stem.
  5. Place a spoonful of the meat mixture onto each cabbage leaf and roll it up, tucking in the sides to form a tight roll.
  6. In a separate bowl, mix the crushed tomatoes, beef or vegetable broth. Pour a small amount of this mixture into the bottom of a baking dish.
  7. Arrange the cabbage rolls in the baking dish, seam side down.
  8. Pour the remaining tomato mixture over the cabbage rolls.
  9. Cover the baking dish with foil and bake in the preheated oven for about 1 to 1.5 hours or until the cabbage is tender and the meat is cooked through.
  10. While the rolls are baking, prepare the tomato sauce by combining crushed tomatoes, tomato paste, sugar, salt, and pepper in a saucepan. Simmer for about 15-20 minutes.
  11. Once the cabbage rolls are done, serve them hot with the tomato sauce.
